A pie bird vents steam through its
mouth during baking and helps prevent juices from bubbling over. To use:
Line pie dish with pastry, set pie bird in the center, and place fill
around the bird. Put a pastry top over the filling. Allow bird to stick
out of a hole in the pastry. Pinch crust around the bird's shoulder, allowing
just head to stick through. Bake.
